just wanted to pop by and share a little recipe i happened to throw together yesterday.
i say unto you, tagine spiced roasted sweet potatoes!
and also, yum. and, you’re welcome.
these came about because i had some sweet potatoes sitting on the shelf in my kitchen that desperately needed to be used.
here’s how it went:
- i preheated my oven to 375.
- peeled and cut up my sweet potatoes into bite-sized chunks.
- tossed them in olive oil and then sprinkled tagine spices + sea salt over them and tossed together again. (i used my hands, definitely the method i recommend)
- spread them out evenly on the a baking sheet and bake for 30 minutes.
so easy! they’re soft but still a little crispy. i did this before nap time, so afterwards when Judah was awake i threw together these yummy bowls with brown rice, my roasted sweet potatoes, broccoli, and some herbed yogurt sauce. the perfect early dinner before going to the park!
